This spicy side-dish is packed with smoky flavours and is great for when you have guests coming over

  • Put the potatoes in a pan of boiling water and cook for about 10 minutes
  • Fry the onions and pepper in low calorie cooking spray for 2-3 minutes. Add the chopped turkey rashers to the onions and fry until cooked. 
  • Drain the potatoes and then add them to the frying pan and fry until golden. Add the tomatoes, a sprinkle of paprika and a sprinkle of peri peri spice, then cook for another 2-3 minutes (until the tomatoes break up).

I have used cooking bacon with all the fat trimmed (cheaper than turkey bacon).

 I would say this could easily be served as main dish with some salad or steamed veggies on side.
