Mixed-bean cassoulet


1. Preheat the oven to 180C/Gas 4. Spray four individual ovenproof dishes with Fry Light. Mix together the remaining ingredients (except for the parsley) in a large pan and ladle into the four dishes.

2. Place the dishes on a baking tray, cover with foil and bake for 25 minutes. Remove the foil and bake for a further 10 minutes, or until thickened and bubbling.

3. Remove from the oven and lightly stir some fresh parsley into each dish. Serve with a wholemeal roll.
