Mix sauce ingredients together.
Heat oil in a wok. Add onion and stir-fry for a minute. Add carrot, garlic and ginger and stir-fry for another minute. Now add mushrooms and stir-fry for a couple of minutes until the carrot begins to soften.
Tip pepper, broccoli and spring onions into the wok, pour over the
sauce and stir-fry for another 2-3 minutes.
Serve immediately while still hot.
