Gordon: "I always like to offer an interesting non-alcoholic alternative and this Asian-inspired tropical fruit punch, made from cartons of fruit juice, fits the bill."
Pour the passion fruit juice, pineapple juice and lychee juice into a large jug. Add the leaves from the mint sprigs and the lime and star fruit. Cover and chill until ready to serve.
Just before serving, stir in the soda water and plenty of ice cubes. You can spike the punch with a glug or two of rum if you like.
