• Blend together yogurt and sour cream
  • add salt and process to smooth mixture
  • transfer the mixture into a cloth lined strainer 
  • place strainer above a bowl and leave to drain at room temperature for 24 hours 
  • remove the cheese together with the cloth from the strainer and turn it out into a bowl
  • store covered in the refrigerator

You can blend in chopped herbs or sweet bell peppers, pressed garlic, grated horseradish etc. to flavour the cheese when done and before storing it in the refrigerator.
