The traditional accompaniment to turkey, home-made fresh cranberry sauce tastes infinitely better than the sort you buy in your local supermarket.

1. Put the cranberries in a small saucepan with 142ml/¼pt cold water. Bring to the boil

2. Reduce the heat and simmer gently for about 10 minutes. The cranberries will pop and open, and the sauce will become thick and pulpy. Sweeten with artificial sweetener and stir in the orange zest.

3. Cool and then pour into a clean jar or airtight container. Cover and store in the refrigerator.
