• Preheat the oven to 200°C/Gas 6. 
  • Cook the pasta according to the packet instructions, adding the broccoli for the final 3 minutes of cooking time. 
  • Drain and set aside. 
  • Spray  a heavy-based frying pan with Fry Light and place over a medium-high heat. 
  • Add the onion and stir-fry for 3-4 minutes. 
  • Add the pasta and broccoli mix and the cherry tomatoes. 
  • Cook for further 1-2 minutes and then transfer to an overproof dish. 
  • In a bowl, whisk together the garlic, eggs and cottage cheese until smooth. 
  • Season and add the parsley. 
  • Pour the mixture over the pasta and toss together. 
  • Sprinkle over the Cheddar Cheese and bake for 30-35 minutes, or until the mixture has just set.
  • Finish with a twist of black pepper and serve.
