1. Preheat the oven to 200°C/Gas 6. Cook the pasta according to the packet instructions, adding the broccoli for the final 3 minutes of cooking time. Drain and set aside.
2. Spray a heavy-based frying pan with Fry Light and place over a medium-high heat. Add the onion and stir-fry for 3-4 minutes. Add the pasta and broccoli mix and the cherry tomatoes. Cook for further 1-2 minutes and then transfer to an overproof dish.
3. In a bowl, whisk together the garlic, eggs and cottage cheese until smooth. Season and add the parsley. Pour the mixture over the pasta and toss together. Sprinkle over the Cheddar Cheese and bake for 30-35 minutes, or until the mixture has just set. Finish with a twist of black pepper and serve.
