American style baked cheescake

This recipe is combination of two recipes by Gary Rhodes


for the base:

200g digestive biscuits
100g melted butter

for the cheesecake mix:

225g caster sugar
3 tablespoons of cornflour
750g  soft cheese
2 eggs
1 teaspoon of vanilla essence
300mls Whipping Cream

half punnet of blueberries (or any soft fruit of your preference)
handful of (chopped) almonds


Preheat oven to 180C/350F/Gas Mark 4

Crush your biscuits (you can use blender or simply put them in zip pastic bag and crush with a rolling pin). melt the butter in a medium pan. Stir in the biscuit crumbs and sugar so the mixture is evenly moistened. Press the mixture into the bottom of springform tin.

Mix sugar and cornflour
Then beat in the cream cheese with a wooden spoon to a creamy texture

Beat in the eggs and vanilla essence with the spoon.
