  • Brown the onion on the oil, add the stock and cauliflower and simmer 30-40 minutes. 
  • Transfer the soup into a blender and puree. 
  • Return to the saucepan and heat through stirring in the horseradish and seasoning to taste. 
  • Pour into bowls and sprinkle with the chopped parsley before serving.
